Why I cook without eggs . . .
My husband was diagnosed with moderate persistent asthma as an adult.  A couple of years later, we discovered eating eggs, or anything with egg as an ingredient, would trigger an asthma reaction.  While his reactions are not life threatening and do not require emergency medical care, the discomfort can last up to a week.  So, we decided to take eggs out of our diet!  We made this change years ago, but I remember how daunting it felt the first few months.  In the beginning, I was so focused on what he could not eat and not all the things he can eat.  The purpose of this blog is to share recipes that will help others with food allergies enjoy cooking and eating!

What you will find on this blog . . .  
All recipes on this blog will be egg-free (EF)!  Some will also be dairy-free (DF) and/or gluten-free (GF), as I also have some experience with both of those allergens.  My brother-in-law (husband's brother) is allergic to gluten.  While his reaction is different, I think we can conclude that food allergies run in the family.  So far, our two children are allergy-free but I did temporarily take dairy out of my diet for a few months while nursing both of them.  So, I will try to label each recipe accordingly in hopes that some of you who struggle with more than one allergen can use them.

About the recipes . . .  
When we first started cooking egg-free, I had a really hard time finding recipes that only omitted eggs.  It seemed most egg-free recipes also omitted other common allergens or called for special ingredients not commonly found in your neighborhood grocery store.  So, I started creating my own recipes that only excludes eggs, using ingredients found in my local grocery store.  

We also try to eat somewhat healthy.  So, I lighten up recipes, when I can.  But we do enjoy the occasional sweet indulgence.  I worry less about making treats healthier, since we do not have them often.  

I have found a cool ap that gives me nutritional information for my recipes.  Please note, I am not a nutritionist!  If you have specific dietary needs, you will need to verify this information.

Photography . . . 
I look at other food blogs that have gorgeous pictures of food.  They are so lovely that I don't even really care what the food tastes like, I just want to look at it.  Well, as  you may have noticed, I am not a photographer.  I blog about what I am cooking for my family.  I literally cook, take a few quick snapshots and then we eat it.  My kids think it is pretty weird that Mommy takes a picture of our dinner most nights.  Haha!  So, I apologize about the picture quality.  I hope you can see past the poor photography and see some recipes your family might enjoy!  Thanks!
